Orange and Coconut Cake

Orange and coconut is a great combination and this orange and coconut cake is no exception. It tastes amazing and simple to make. You can try it with lemon if you like because lemon and coconut is also another good flavour combination.

Ingredients

125 grams unsalted butter

200 grams caster sugar

150 ml plain yoghurt

150 grams self raising flour

50 grams desiccated coconut

2 large eggs

2 tablespoons orange juice

zest of half a small orange (optional)

Orange glace icing

Method for Orange and Coconut Cake

Pre-heat oven to 180 Celsius

Prepare an 8 inch square tin by greasing it with butter and lining it with baking paper and put to one side

Put some butter and sugar in a bowl and cream together

Add egg, one at a time, and whisk well between adding the next egg

Add the flour, yoghurt, desiccated coconut, orange juice and zest and whisk until smooth

Put the mixture into the prepared cake tin and level it out

Bake in the oven for about 30-35 minutes until slightly golden brown on top.

Test with a toothpick, if it comes out clean it is ready
