Chocolate cake with no eggs : Vegan Chocolate Cake

This is a great sponge cake without eggs for when you do not find eggs or do not like eggs. Leave the milk out to make it dairy free and vegan. I have made this chocolate with no eggs before the egg shortages and it is one of my favourites. Eggs, flour and other supplies have been difficult to find at this time of Covid-19 lockdown or quarantine.

Ingredients for chocolate cake without eggs

200 grams plain flour

200 grams sugar

25 grams cocoa powder

75 ml vegetable oil

120 ml water

120 ml milk (if you do not like milk or cannot find it you can use all water)

1 teaspoon baking powder

half teaspoon bicarbonate of soda

1 tablespoon lemon juice or vinegar

Method : Chocolate cake without eggs

Start of by pre-heating your oven to 175 Celsius

Prepare a 20 cm/ 8 inch square cake tin and put to one side

Put all your dry ingredients in a bowl, whisk together and put to one side

If sugar is lumpy just break any lumps with your hands

Make a well in the centre and add in the rest of the ingredients and whisk the mixture together until smooth

Pour the mixture into the prepared cake tin

Bake in the oven for 40-45 minutes until firm and springy to the touch

Test with a toothpick, if it comes out clean it is ready.

I have made some chocolate fudge icing which you can make too or serve as it is

Spread on top of the cake and add some sprinkles
