I have quite a lot of frosting recipes on this blog, most of them can be used as macaron filling. Salted caramel macaron filling, vanilla macarons, and basically most flavour macarons can be filled with the frostings here.

When the macarons are properly baked through they easily come off the baking paper as you will see in the video. Match the macarons with the right size and turn them upside down.
Macaron filling method
I made some salted caramel, let it cool and then put it in a piping bag fitted with a round nozzle. Pipe the macaron filling into the centre of one macaron. Make sure you do not pipe all the way around the edges because when you sandwich the macarons the filling will spill out and become messy.

Macaron filling Recipe Ideas : You can flavour most of these fillings with flavours of your choice. They are also quite simple to colour.
French buttercream : This is great for using up leftover egg yolks
Swiss Meringue Buttercream : This makes a small batch, perfect for trying out.
Italian Meringue Buttercream : This also makes a small batch and easy to scale up
Homemade Strawberry Jam (You can combine this with some of the buttercream) . You can pipe a ring of buttercream and some jam in the middle. You could use the jam alone.
