How to make filo pastry from scratch

In this video I am going to show you how to make phyllo or filo pastry from scratch. This is a very thin pastry used to make apple strudel, samosas or baklava. I love making pastries and always love to challenge myself. I make pastries for fun and you can have fun making pastry too with this simple to follow video tutorial.

Ingredients for filo pastry

225 strong white flour

1 quarter teaspoon salt

1 teaspoon sugar (leave out if making savoury recipe)

1 egg

30 ml vegetable oil

75 ml warm water

1 quarter teaspoon lemon juice

Method : How to make filo pastry

Put the flour, salt and sugar in a bowl.

Pour the oil into a bowl, add in the the egg and lemon juice and whisk together.

Make a well in the flour mixture and pour in the egg mixture, then pour in the water

Mix together with a fork and when it is too thick to mix with a fork use your hands and knead it in the bowl.

Remove from the bowl and then put on a lightly oiled surface and knead and stretch and fold until it is smooth.

Put the cotton cloth, you can buy one on amazon (affliate) on the table and put your dough on it and cover with a warm bowl.

Leave this to rest for 30 minutes.

Remove the bowl and put some flour on the cloth

Stretch the dough on the cloth into a rectangle shape, with your hands

When it is about 15cm by 10cm you can use a rolling pin to help you along. Roll it as much as you can and then put rolling pin to one side.

Use your hands for the rest of the time to gently stretch the dough until it is about 70 cm by 40 cm.

You should be able to see your hand under the pastry.

Depending what you need it for leave it to rest for 15 mins and hard so that it easier to work with without ripping.
