In this video I show you how I maintain my sourdough starter without discarding. This is a very simple and low maintenance sourdough starter.
I keep it in the fridge so that I do not feed it often. I only feed it when I need it. I get the sourdough starter I need out and then feed the starter and put it back in the fridge.

A strong sourdough starter can be used straight from the fridge without feeding first, I do that.
