Method for cinnamon sugar palmiers

Prepare one or two baking trays by putting baking paper on them. The amount of trays you will use depends on how much puff pastry you are going to use.

Roll out the puff pastry until about 35cm x 15 cm

Brush some melted butter on top to help the cinnamon sugar stick

Roll the puff pastry from the long side to the centre, then roll the other side to the centre so that they meet up

Cut the pamiers and place on the baking trays

Put the cinnamon sugar palmiers in the fridge for about 20-30 minutes to firm up

About 5 minutes before getting them out of the oven, pre-heat oven to 200 Celsius

Brush with egg wash (optional). You make the egg wash by mixing an egg and milk and whisking together

Bake in the oven for about 15-20 minutes or until golden brown on top and on the sides

Leave them on the baking tray for about 5 – 10 minutes to get the cinnamon sugar to settle and serve. Can serve warm or cold. Put them on a cooling rack to cool completely

You can dust some icing sugar on top (optional)
