225 grams mixed dried fruit
2 tablespoons tea to soak the fruit
55 grams butter
175 ml milk
25 grams caster sugar
375 grams strong white bread flour
2 teaspoons mixed spice
seeds from 2 cardamoms
1 packet fast action yeast (about 7 grams)
zest of one lemon
1 egg beater
40 grams flaked almonds (optional)
175 grams marzipan
Method to make German stollen bread recipe video
Put the mixed dried dried fruit and lemon zest in a bowl
Add the 2 tablespoons of tea in the fruit
Put the butter, milk and sugar in a bowl and stir and put in the microwave until butter has melted. Stir until sugar has dissolved. Leave until it is lukewarm
(Another option is to put the sugar, milk and butter in a bowl and melt over a low heat and stir until the sugar dissolves. Leave until it is lukewarm)
Crush the cardamom pods, sift the flour and and the cardamom and mixed spice into a bowl
Stir in the yeast and mixed fruit and flaked almonds (if using), make a well in the centre and pour in the milk mixture and egg and mix.
When it is too thick to mix with a spoon use your hands to knead it
Put the dough on a floured surface and knead
Put the mixture into a bowl and leave until doubled in size
When ready put the dough on a floured worktop then roll out into a square, about 25 cm
Roll the marzipan into a sausage shape
Pace it in the middle of the dough and leave a boarder around it, fold the dough over
Place seam side down on baking tray. Cover with cling film and leave to double
Switch oven on to 180 Celsius Bake for 40 minutes or until golden brown on top
Brush with melted butter and put icing sugar on top
Wait for it to cool completely before serving
