This is a simple no bake coconut ice recipe that is quick to make and tastes amazing.
Coconut ice ingredients
450 grams granulated sugar
150 ml milk
150 grams dessicated coconut
Prepare a 7 inch square cake tin by putting greaseproof paper at the bottom
Put the milk and sugar in a pot and put on a medium heat and stir until the sugar has dissolved.
Leave to boil until the mixture gets to the soft ball stage on a sugar thermometer, about 116 Celsius.
Remove from the heat and stir in the dessicated coconut.
Pour half of the mixture into the prepared cake tin and press it down with a spatula.
Colour the remaining mix with pink food colouring and mix well.
Put it on top of the white dessicated coconut and pat it down.
Cut them into small pieces before it sets completely and leave to cool completely before serving.
