Baked cheesecake recipe UK

This baked cheesecake recipe UK is also known as Manhattan cheesecake and it is one of my favourite recipes. It needs to be made at least a day in advance for best results.

Ingredients for baked cheesecake recipe

100 grams butter

200 grams crushed digestives biscuits

400 grams cream cheese

140 grams caster sugar

450 ml soured cream

2 large eggs

2 teaspoons vanilla extract

Topping (optional)

Jam, I used some of my homemade strawberry jam

Method to make baked cheesecake

Pre-heat oven to 190 Celsius

Brush a 20cm round springform cake tin with some vegetable oil and put to the side

Melt the butter in a pot big enough pot to hold the biscuits

Add the crushed biscuits to the melted butter, put them in the cake tin and spread them on the bottom

Put the cream cheese, eggs and 100 grams of the caster sugar and one teaspoon of the vanilla extract

Use a ballon whisk to whisk together until smooth

Pour the mixture over the biscuits and smooth it over with a knife or spoon

Put the baking tin on an oven dish and bake in the oven for about 20 minutes until set

Remove from the oven and leave it to slightly cool for about 20 minutes, you can switch the oven off and then switch it back on 5 minutes before you put it back in the oven.

Put the sour cream, sugar and one teaspoon vanilla extract and mix

Pour the mixture over the cream cream mixture and level with a knife.

The cake tin needs to go back in the oven for about 10 more minutes.

Remove from the oven and leave to cool completely

Place it in the fridge for a minimum of 8 hours, can leave it overnight.

Remove from the fridge. If you have a blowtorch you can use it to loosen the edges or use a spatula to loosen the edges.

Loosen the springform tin and put the tin on a serving plate. If you want to remove it from the base of the cake tin you can use a cake lifter so as no to break the cake tin.

Cut slices, warm the jam up in a microwave and spoon it on top of the cheesecake and serve.
