As much as butter cream icing transforms cupcakes from simple little cakes into lavish little cakes suitable to grace even the most important event on any calendar, it is not the only icing able to make this transformation. This is a great recipe cream cheese frosting for carrot cakes too. The results are light, fluffy and above all delicious. In this recipe I will be showing you how to make cream cheese frosting, as it is also known.
Ingredients
- 226 grams cream cheese
- 60 grams icing sugar
- 2 teaspoons vanilla extract
- 160ml double cream (you can use as little or much as you like) depending on the consistency you are after
- Gel colours of your choice

Method
Put all the ingredients in a bowl and whisk until nice and smooth as you would like it to be.
If you are going to colour the icing I suggest you do so after you get the right consistency using a little bit of the gel at a time until you get the right colour because the gels are concentrated so they are quite strong. A little goes a long way!
