This small batch funfetti cupcakes recipe is quick and simple to make. These colourful funfetti cupcakes are pretty and great for kids and adults alike. They not only look pretty but taste amazing too!
I have decorated them with some of this vanilla buttercream but you can use any buttercream of your choice, including this Swiss Meringue Buttercream which you may need to double.
How much icing you use depends on how much piping you put on your cakes.
Ingredients for small batch funfetti cupcakes
100 grams self-raising flour
60 grams butter
15 ml vegetable oil
70 grams sugar
1 teaspoon vanilla extract
2 tablespoons plain yoghurt
half teaspoon baking powder
1 large egg
some sprinkles, these are the best sprinkles I use because they keep their colour even when baked

Vanilla buttercream icing (half of it)
Method for the small batch funfetti cupcakes
Pre-heat oven to 180 Celsius, prepare a 6 hole cupcake tray with cupcake cases and put to one side.
Put the oil, butter, vanilla extract and sugar in a bowl and whisk together.
Add in the egg and whisk
Sift the flour and baking powder into the bowl, add in the sprinkles
Add the plain yoghurt and mix
Divide the mixture into the cupcake tray
Bake in the oven for about 15-18 minutes. Test with a toothpick after 15 minutes. If it comes out clean they are ready, if not, out them back in the oven for a few more minutes.
Remove them from the oven, leave in the tray for 5-10 minutes. Remove and put on a cooling rack to cool completely
While the cupcakes are cooling make half of this vanilla buttercream icing which you will use to decorate the cupcakes.
Depending on how you pipe you may need more icing. If you do, just make more.
