In this video tutorial I show you how to make this simple sourdough focaccia. It is a great recipe to use up some sourdough discard and starter. Sourdough discard really is sourdough starter.
Ingredients for sourdough focaccia
250 grams white bread flour
100 grams sourdough starter or sourdough discard
175ml water
2 teaspoons salt
Italian herb mix (I buy mine in a jar)
Method for sourdough discard
Mix all the sourdough sourdough focaccia ingredients in a bowl, gently knead it in the bowl
Cover the bowl and leave it to rise until double in size
Prepare a cookie tray with some baking paper
Gently gather the dough in the bowl and transfer it to the baking tray, stretch it as best as you can into a focaccia shape
Flour or oil your hands if the dough is too sticky
Cover the dough with a piece of oiled clingfilm
Leave it to rest and rise for about 3o mins to an hour
Using floured fingers press random dimples into the dough
Sprinkle some salt on top and drizzle the olive oil on top
Pre-heat oven to 200 Celcius
Bake for about 30-40 minutes until golden brown on top
Remove from the oven, add more olive oil and herbs (optional)
Leave to cool slightly and serve
