Baked coffee and walnut pudding

If you love coffee and walnuts you should love this recipe. It is a great dessert, the sauce goes really well with the puddings. You could also add some vanilla ice cream.

Ingredients for coffee and walnut pudding

150 grams self raising flour

60 grams soft, unsalted butter

60 grams soft brown sugar

55 grams chopped walnuts

1 teaspoon cinnamon powder (optional)

2 large eggs

1 tablespoon coffee granules dissolved in 2 tablespoons hot water

Walnut sauce recipe

150 ml double cream

60 grams butter

60 grams soft brown sugar

30 grams chopped walnuts

Pre-heat oven to 160 Celsius

Method for coffee and walnut puddings

Grease, with butter, 6 individual metal pudding moulds

Cream the butter and sugar together and then add the eggs one at a time and mix well between each egg added

Add in the flour, cinnamon, cooled coffee and walnuts, mix well

Divide the mixture between the prepared pudding tins

Put the basins on an oven tray.

Bake in the oven for 25-30 minutes until firm, test with a toothpick and if it comes out clean then then they are ready.

While the puddings are baking make the walnut sauce.

Put all the walnut sauce ingredients in a pot, stir until it is a brown and thick sauce

Gently easy the puddings out of the moulds and put on a serving plate. Pour over some of the walnut sauce, you could add some ice cream too. Enjoy.
