I love baking Lamingtons and I am going to share with you this easy Lamingtons recipe. Lamingtons are made by baking a lamington cake and then cutting it into pieces and then dipping the pieces in a runny chocolate icing and then rolled in icing.
This is my version of the traditional Australian treat and they taste great. These cakes need a firm cake base so that it does not break apart when dipped in the chocolate icing
Lamington Ingredients
- 130 grams butter
- 130 grams caster sugar
- 100 grams self raising flour
- 50 grams plain flour
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 tablespoons milk
Chocolate icing for dipping the cakes
- 450 grams icing sugar
- 35 grams cocoa powder
- 120 ml milk
- 45 grams butter
- 200 grams unsweetened dessicated coconut
Method
- Preheat oven to 175 Celsius
- Grease and line an 8 inch square cake tin and put it to one side.
- Cream the butter and sugar together and then add in your eggs one at a time and mix well between each egg added.
- Add in the vanilla extract, milk and flour and mix until smooth
- Put the mixture in the prepared cake tin and bake in the oven for 25-30 minutes or until nice and golden brown on top. Test with a toothpick, if it comes out clean it is ready
- Remove the cake from the oven and leave it in the cake tin for about 5 – 10 minutes. Turn it out onto a cooling rack and leave to cool completely
- While the cake is cooling make the sauce
- Mix the cocoa powder and icing sugar together in a bowl. Put the milk and butter in a heat proof bowl. Melt the butter over a pot of boiling water until the butter melts. You can also melt them in the microwave.
- Pour the milk mixture into the icing sugar mix and whisk together
- When the cake has cooled completely cut it into cubes, whatever size you like, and then dip them, one at a time, first in the chocolate icing and then roll them in the dessicated coconut. Put the cakes on greaseproof paper and leave them to set.
- Serve and enjoy.
