Mint chocolate is one of my favourite flavour combinations. In this video tutorial I show you how to bake these mint chocolate cupcakes. The recipe can be easily doubled to make 12.
Ingredients for mint chocolate cupcakes (Makes 6)
80 grams self-raising flour
20 grams cocoa powder
60 grams butter
15 ml vegetable oil
70 grams sugar
1 teaspoon peppermint extract (depends on your extract, some are stronger and needs less)
4-6 tablespoons buttermilk
half teaspoon baking powder
1 large egg
To decorate the mint chocolate cupcakes
Chocolate Buttercream (half of it, add some peppermint extract to it) to make it mint chocolate buttercream.
Mint chocolate to decorate (any mint chocolates of your choice.)
Method : Mint Chocolate Cupcakes
Pre-heat oven to 180 Celsius, prepare a cupcake tray with cupcake cases and put to one side.
Put the oil, butter, peppermint extract and sugar in a bowl and whisk together.
Add in the egg and whisk
Sift the flour, cocoa powder and baking powder into the bowl
Add the buttermilk and mix until smooth
Divide the mixture into the cupcake tray
Bake in the oven for about 15-18 minutes. Test with a toothpick after 15 minutes. If it comes out clean they are ready. Remove them from the oven, leave in the tray for 5-10 minutes. Remove and put on a cooling rack to cool completely
Decorating the mint chocolate cupcakes with mint buttercream
While the cupcakes are cooling make half of this chocolate buttercream which you will use to decorate the cupcakes. Add some peppermint extractto the chocolate buttercream
Depending on how you pipe you may need more icing. If you do, just make more.
When the mint chocolate cupcakes have cooled, pipe the buttercream on top and place some chocolate on top.
You can dust with icing sugar (optional)
