Ingredients for rich fruit cake cupcakes (Makes 6)
60 grams unsalted butter (softened)
60 grams soft brown sugar
60 grams plain flour
half teaspoon mixed spice
quarter teaspoon cinnamon powder
pinch salt
half teaspoon black treacle or golden syrup (optional)
220 grams softened dried fruit (I soften mine by leaving them in some tea or fruit juice for a few hours )
Method for rich fruit cake cupcakes
Preheat oven to 150 Celsius and then line a 6 cupcake tray with cupcake cases
In a bowl, add in softened butter and the soft brown sugar, mix together
Add in the egg and mix together
Add the flour, mixed spice and salt and finally the fruit and mix
Divide the mixture between the 6 cupcake cases
Bake
Leave to cool completely before decorating.
