Despite the name these cakes are soft and fluffy and delicious. The oat, raisins and chocolate chip rock cakes recipe is a cross between a scone and cake. It is a quick and simple recipe that is fun to make and great for baking with kids.
Ingredients for chocolate chip rock cakes
115 grams butter
90 grams soft brown sugar
90 self raising flour
50 grams raisins
50 grams chocolate chips
60 grams rolled oats
1 large egg
Method for chocolate chip rock cakes
Pre-heat oven to 180 Celsius
Prepare two cookie trays by putting some baking paper on them and put to the side (You may be able to fit all of them on one tray, depending on the cookie tray size or the rock cakes size)
Cream the butter and sugar together and then add the egg and whisk
Add the flour, oats raisins and chocolate chips, mix
Put spoonfuls of the batter on the cookie tray
Bake in the oven for about 15 minutes or until slightly golden brown on top
Remove from the oven, leave them on the tray for about 5 minutes and then put on a cooling rack to cool completely
