In this recipe I am going to share this highlander shortbread biscuits recipe.<\/p>\n<p>It is only recently that I have tried to recreate them and that is when I realised that they are actually a type of shortbread biscuit. \u00a0They are very easy to make and delicious.<br \/>\n<strong>Ingredients<\/strong><\/p>\n<ul>\n<li>100g \u00a0butter<\/li>\n<li>50g icing sugar<\/li>\n<li>100g plain flour<\/li>\n<li>50g corn flour<\/li>\n<li>2-3 tbsp Demerara sugar (optional)<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>Cream the butter and icing sugar together until light and fluffy.<\/li>\n<li>Add the flour and corn flour and mix well, using your hands to knead the mixture together.<\/li>\n<li>Roll into a thick sausage, then roll in the Demerara sugar, wrap in cling film and chill in the fridge for an hour. \u00a0These are make ahead cookies so you can even make them the day before you need them.<\/li>\n<li>Preheat the oven to 190Celsius<\/li>\n<li>Grease a baking tray.<\/li>\n<li>Remove from the fridge and cut into 14 slices.<\/li>\n<li>Bake for 13 minutes. They should be a bit brown around the edges.
