The lemon icing compliments the cake very well.  You can add honey to this cake to make it a honey, lemon and ginger cake.<br>sponge<br>I used this amazing <a rel=\"noreferrer noopener\" href=\"https:\/\/amzn.to\/38dfB8L\" target=\"_blank\">lemon drizzle flavoured icing sugar<\/a> but you can make your own if you cannot find it<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients for lemon and ginger cake<\/h4>\n\n\n\n<p>225 grams self-raising flour<\/p>\n\n\n\n<p>115 grams butter<\/p>\n\n\n\n<p>115 grams soft brown sugar<\/p>\n\n\n\n<p>  2 large eggs<\/p>\n\n\n\n<p>   1 tablespoon ground ginger<\/p>\n\n\n\n<p>   1 teaspoon mixed spice or cinnamon powder<\/p>\n\n\n\n<p>zest of one small lemon<\/p>\n\n\n\n<p>  2 tablespoons golden syrup, honey or treacle<\/p>\n\n\n\n<p>  2 tablespoons milk<\/p>\n\n\n\n<p>stem ginger, cut into small pieces (optional)<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">To decorate lemon and ginger cake<\/h4>\n\n\n\n<p><a href=\"https:\/\/meadowbrown-trh1.wp1.site\/simple-water-icing\/\">Glace icing<\/a><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Method for lemon and ginger cake<\/h4>\n\n\n\n<p>Pre-heat oven to 160 Celsius<\/p>\n\n\n\n<p>Grease and line a 20cm square cake tin and put to the side<\/p>\n\n\n\n<p>Put the flour, and spices in a bowl<\/p>\n\n\n\n<p>Rub in the butter and add the lemon zest<\/p>\n\n\n\n<p>Make a well in the centre and add the eggs, milk and golden syrup and stem ginger pieces (if using)<\/p>\n\n\n\n<p>Mix until all the ingredients are mixed in<\/p>\n\n\n\n<p>Put the mixture in the cake tin and bake for about 35 &#8211; 40 minutes until golden brown on top.<\/p>\n\n\n\n<p>Test with a toothpick, if it comes out clean it is ready.  If not, put back in the oven for about 5 minutes and test again<\/p>\n\n\n\n<p>Remove from the oven and leave the cake in the tin for about 10 minutes <\/p>\n\n\n\n<p>Flip the cake on to a cooling rack, peel off the paper and leave to cool completely<\/p>\n\n\n\n<p>While it is cooling, make the <a href=\"https:\/\/meadowbrown-trh1.wp1.site\/simple-water-icing\/\" target=\"_blank\" rel=\"noreferrer noopener\">glace icing<\/a> for the cake.
