{"id":1591,"date":"2015-12-19T13:58:57","date_gmt":"2015-12-19T13:58:57","guid":{"rendered":"https:\/\/wordpress-1235014-4411782.cloudwaysapps.com\/?p=1591"},"modified":"2020-06-10T13:18:36","modified_gmt":"2020-06-10T13:18:36","slug":"moist-red-velvet-cupcake-recipe-without-buttermilk","status":"publish","type":"post","link":"https:\/\/meadowbrownbakery.com\/?p=1591","title":{"rendered":"Moist red velvet cupcake recipe"},"content":{"rendered":"<p>In this recipe I am going to show you how to make a moist red velvet cupcake recipe without buttermilk in a few simple steps. \u00a0Red velvet cupcakes have a slight chocolate taste because of the cocoa powder added to them. \u00a0They get their lovely dark red colour from the red food colouring<\/p>\n<p>I use red food colouring paste to colour my cakes because the liquid just does not work for me. \u00a0The first time I tried baking red velvet cakes or cupcakes I used about 2 tablespoons of red liquid food colouring but when the cake came out of the oven it had no traces of red at all.<\/p>\n<p>Some people do use food colouring liquid and it gives them great results in their red velvet cakes but I have not come across that kind yet.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>150 grams self raising flour<\/li>\n<li>2 teaspoons cocoa powder, sifted to remove lumps<\/li>\n<li>160 grams caster sugar<\/li>\n<li>1\/4 teaspoon baking powder<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>60 grams vegetable oil<\/li>\n<li>1 large egg<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>120 ml milk with 1\/2 teaspoon of lemon juice added to it (mix together and leave to one side for at least 5 minutes)<\/li>\n<li>1\/4 teaspoon red food colouring paste<\/li>\n<li>1\/2 teaspoon lemon juice or white vinegar<\/li>\n<li>1\/2 teaspoon bicarbonate of soda<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>Preheat your oven to 175 Celsius<\/li>\n<li>Line your cupcake tray with cupcake liners<\/li>\n<li>Mix all the dry ingredients together<\/li>\n<li>Put the vegetable oil, milk, egg and vanilla extract in a jug and mix<\/li>\n<li>Add the red food colouring and mix well<\/li>\n<li>Pour the wet mixture into the dry ingredients and mix well until smooth<\/li>\n<li>Finally add the bicarbonate of soda and lemon juice and mix well<\/li>\n<li>Divide the mixture between the 12 cupcake cases<\/li>\n<li>Bake in the oven for oven for 15-18 minutes.
