It is a very quick and simple to bake and tastes amazing.  The spices give off a wonderful aroma during baking.  It is a traditional sponge cake from Northern England.  It is one of the British bakes I have on my website.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Parkin Ingredients<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>100 grams oats<\/li><li>100 grams plain flour<\/li><li>100 grams butter<\/li><li>100 grams soft brown sugar<\/li><li>50 ml treacle or golden syrup<\/li><li>1\/4 teaspoon bicarbonate of soda<\/li><li>1 medium egg<\/li><li>4 tablespoons milk<\/li><li>pinch of salt<\/li><li>1 teaspoon ginger powder<\/li><li>1 teaspoon mixed spice<\/li><li>one quarter teaspoon cinnamon powder<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Parkin Method<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>Pre-heat oven to 160 celsius, fan oven<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Prepare a 18cm or 20 cm square cake tin with baking paper and put to one side<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Add oats, flour, salt, spices and bicarbonate of soda into a bowl<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Put butter, sugar and golden syrup in a pot and put on a medium heat on the hob until butter is melted<\/li><li>Remove them from the heat and leave to cool for a few minutes, add the milk and stir<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Pour the mixture into the oat mixture, stir together, add the egg and mix<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Pour the mixture into the prepared cake tin <\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Bake in the oven for about 35- 40 minutes until firm and springy to the touch<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Test with a toothpick, if it comes out clean it is ready<\/li><li>Remove from the oven, leave in the cake tin for about 10 mins and put on a cooling rack  to cool completely.<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Serve parkin by cutting it into bite size pieces or bigger pieces, whatever you prefer.<\/h4>\n\n\n\n<p><a href=\"https:\/\/meadowbrown-trh1.wp1.site\/easy-lemon-drizzle-traybake-recipe-uk\/\" target=\"_blank\" rel=\"noreferrer noopener\">Other British bakes to try<\/a><\/p>\n\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Parkin is like a ginger cake with oatmeal in it.
