I baked moist citrus, orange and lemon bundt cakes, which are really fluffy and taste amazing.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Recipe for citrus loaf cakes<\/h4>\n\n\n\n<p>3 large eggs (about 190 grams)<\/p>\n\n\n\n<p>150 grams caster sugar<\/p>\n\n\n\n<p>160 grams self raising flour<\/p>\n\n\n\n<p> 40 grams plain flour<\/p>\n\n\n\n<p>120 grams soft unsalted butter<\/p>\n\n\n\n<p> 50 ml vegetable oil<\/p>\n\n\n\n<p>one eighth of a teaspoon salt<\/p>\n\n\n\n<p>zest of one small lemon<\/p>\n\n\n\n<p>zest of one small orange<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Decorating the citrus loaf cakes<\/h4>\n\n\n\n<p><a href=\"https:\/\/meadowbrown-trh1.wp1.site\/lemon-drizzle-cake-icing\/\" target=\"_blank\" rel=\"noreferrer noopener\">How to make the drizzle for the cakes<\/a> (optional)<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Method for citrus loaf cakes<\/h4>\n\n\n\n<p>Prepare your bundt pan by brushing with melted butter and flouring it.  You can watch a video I did showing.  <a rel=\"noreferrer noopener\" href=\"https:\/\/meadowbrown-trh1.wp1.site\/how-to-prepare-a-bundt-tin\/\" target=\"_blank\">How to prepare a bundt tin<\/a><\/p>\n\n\n\n<p>Pre-heat oven to 170 celsius<\/p>\n\n\n\n<p>Put butter, oil, sugar, salt and zests in a bowl and whisk together until creamy<\/p>\n\n\n\n<p>Add the eggs, one at a time and whisk well before adding the next egg<\/p>\n\n\n\n<p>Add the  flour and fold it in.<\/p>\n\n\n\n<p>Divide the mixture between your prepared cake tray and level it<\/p>\n\n\n\n<p>Bake in the oven for about 35-40 minutes until slightly golden brown<\/p>\n\n\n\n<p>Test with a toothpick, if it comes out clean it is ready, if not, put back for another 5 minutes or so and check again<\/p>\n\n\n\n<p>Remove from the oven pierce cakes with a toothpick, put the drizzle in the cakes (optional)<\/p>\n\n\n\n<p>Leave the cakes in the tins for about 10 minutes and then put a cooling rack on top and flip the cakes over.<\/p>\n\n\n\n<p>Remove the bundt pan<\/p>\n\n\n\n<p>If they get stuck, turn cake over and gently go around with a spatula and flip again<\/p>\n\n\n\n<p>Leave to cool completely and serve.<\/p>\n\n\n\n<p>Enjoy<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I decided to use my Nordic ware citrus loaf pan with three mini cakes called the lemon trio loaf pan.
