{"id":1309,"date":"2015-12-17T18:08:16","date_gmt":"2015-12-17T18:08:16","guid":{"rendered":"https:\/\/wordpress-1235014-4411782.cloudwaysapps.com\/?p=1309"},"modified":"2020-03-16T19:01:09","modified_gmt":"2020-03-16T19:01:09","slug":"how-to-bake-rock-cakes","status":"publish","type":"post","link":"https:\/\/meadowbrownbakery.com\/?p=1309","title":{"rendered":"How to Bake Rock Cakes : Rock Cakes Recipe"},"content":{"rendered":"<p>Rock cakes or rock buns as they are sometimes known are quite simple and quick to make. \u00a0They are a great alternative to scones, they taste like scones but much simpler to make. \u00a0Delicious bakes do not need to take a long time. \u00a0 I have heard that they take their name from how they look. \u00a0This rock cakes recipe does not need any special cutters, they are simply dropped onto the baking tray and sprinkled with some sugar.<\/p>\n<p>I am going to share with you this simple and quick rock cakes recipe.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>300 grams self raising flour<\/li>\n<li>75 grams caster sugar<\/li>\n<li>1\/4 teaspoon mixed spice<\/li>\n<li>1\/4 teaspoon cinnamon powder<\/li>\n<li>90 grams unsalted butter, softened<\/li>\n<li>160 grams dried cranberries, raisins or sultanas (you can mx them all together if you like)<\/li>\n<li>1 large egg<\/li>\n<li>150 ml milk<\/li>\n<li>2 tablespoon demerara sugar (for sprinkling onto the cakes before they go in the oven)<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>Grease two baking trays.
