I sprinkle the walnuts and chocolate on top to give it a streusel like effect. \u00a0I am not sure if the crunchy top can be called streusel because I do not use any fat\/butter in it. \u00a0A streusel by definition is a crumbly topping or filling made from fat, flour, sugar, and often cinnamon.<\/p>\n<p>It\u00a0 was first popularised in Germany. The word itself means \u201cscattered\u201d or \u201csprinkled\u201d, or more literally \u201cstrewn.\u201d \u00a0It is a nice way to add sweetness\u00a0and texture to a cake.<\/p>\n<p><strong>Ingredients for the cake<\/strong><\/p>\n<ul>\n<li>113g unsalted butter, softened<\/li>\n<li>200g caster sugar<\/li>\n<li>2 large eggs<\/li>\n<li>I teaspoon vanilla extract<\/li>\n<li>215g plain flour<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>1\/2 teaspoon bicarbonate of soda<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>180ml plain yoghurt<\/li>\n<\/ul>\n<p><strong>For the topping<\/strong><\/p>\n<ul>\n<li>120g walnuts, chopped or broken into small pieces<\/li>\n<li>100g chocolate chip cookies<\/li>\n<li>1 teaspoon ground cinnamon<\/li>\n<li>1 tablespoon plain flour<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>Preheat the oven to 180C<\/li>\n<li>Butter and line a cake tin with baking paper which is about 21cm x 21cm x 5cm<\/li>\n<li>Mix all the ingredients of the topping into a bowl and set aside<\/li>\n<li>Put all your cake ingredients into a bowl and mix until smooth<\/li>\n<li>Spoon the cake mixture into the prepared cake tin<\/li>\n<li>Sprinkle all of the topping mixture on to of the cake and lightly press it onto the cake with your hands<\/li>\n<li>`Bake for 35-40 minutes, test with a toothpick or cake tester. \u00a0If it comes out clean it is ready<\/li>\n<li>Leave it in the cake tin for to minutes before lifting out onto a cooling rack.
