Nordic Ware tiered heart pan recipe

I love Nordic Ware U.K bundt pans because they are strong and durable.  I also love the many designs which imprint on the cakes.  I have quite a few of these bundt pans and my collection is increasing.  I decided to use my Nordic Ware tiered heart pan  for the first time with this Nordic Ware tiered heart pan recipe.

Ingredients

  • 260 ml sour cream or plain yoghurt
  • 260 grams plain flour
  • 160 grams caster sugar
  • 100 grams soft brown sugar
  • 80 ml vegetable oil
  • 3 medium sized very ripe bananas
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon powder
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon mixed spice
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 and 1/4 teaspoons baking powder
  • 100 grams walnuts (optional)

Method

  • Preheat oven to 175 Celsius
  • Butter and flour or spray with non stick baking spray your Nordic Ware tiered heart bundt pan and put to one side
  • In a large bowl of mashed bananas, add the vegetable oil
  • Then add in the eggs, vanilla extract, yoghurt and sugars and whisk together
  • Add in the flour, salt, baking powder, bicarbonate of soda, spices and mix
  • If adding walnuts you can now add them and mix them in
  • Pour the mixture into your prepared bundt pan
  • Bake in the oven for 55 – 60 minutes or until it is well reason and a skewer inserted inside comes out clean
  • remove from the oven and leave the cake in the tin, on a cooling rack for about ten minutes and then place another cooling rack on top and flip the cake.
  • Remove the cake from the cake tin and leave it to cool completely
  • When the cake has cooled decorate it anyway you want. I sieved a bit of icing sugar on top
  • Serve and enjoy

I realised when I made the mixture that the cake left a little bit of space at the top but it still had a good rise and the most important part was the three heart layers show.  The cake is quite  big so it produces big slices so even though the mixture does not go all the way to the top you have a generous size slice.
