Delicious malt loaf recipe

This delicious malt loaf recipe is quick and simple to make and the results taste amazing. The malt loaf taste improves with time so you could bake it and then eat it 2-3 days later, if you can wait that long.

Malt loaf tastes great on its own or toasted with some butter accompanied by a nice hot drink.

One day when I was about to go out and buy some malt loaf, for my son, I thought to myself that surely this can be baked at home. I did some research and then found out that I needed malt extract to get that unique taste in malt loaf. I naively set off to the supermarket to buy some malt extract, without any success.

I came back home and decided to order some online. I did not want to wait for the delivery even if it was coming the next day because had other plans. I found out that health food stores sometimes sell malt extract so I decided to head out again to my local health food store where I finally managed to buy some.

I came back home and immediately started baking and I was quite impressed with the results. I will share with you this delicious malt loaf recipe.

Ingredients

  • 75ml hot black tea
  • 90g malt extract
  • 45g dark muscovado sugar
  • 150g mixed dried fruit
  • 1 large egg
  • 125g plain flour
  • 1/2 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • pinch of salt

Method

Pre-heat your oven to 150 Celsius. Grease and line the bottom and sides of a 450g loaf tin with butter and then line it with baking paper.

Put the dried fruit, malt extract and sugar into a large bowl and then pour in the black tea. Stir until the sugar has dissolved and then add the egg.

Add the flour, salt, baking powder and bicarbonate of soda into the tea mixture and mix well and then spoon the mixture into the prepared loaf cake tin. Bake for 50 mins until it is firm and well risen test with a toothpick, if it comes out clean it is ready. You can brush with a little more malt extract while it is still hot to glaze and leave to cool.
Remove the malt loaf from the cake tin and put it on a cooling rack to cool completely.
